This book describes the results and the technical-scientific aspects of the Life Cycle Inventory study of pasta and bread according to the standards ISO 14040, ISO 14044, ISO/TS 14048.

Such study stems from the Research Project of Significant National Interest (PRIN, 2017) entitled “Italian Life Cycle Inventory Database of Agri-Fo­od products” (ILCIDAF, Prot. 2017EC9WF2), financed by the Ministry of University and Research (MUR). The project seeks to overcome the limitations related to the absence of national data by developing an Italian database at national and regional level of Life Cycle Inventory (LCI) of the most significant agri-food products for the national economic system. The absence of an Italian database for LCA studies of the agri-food products is a serious limitation in the sector. The databases currently available are from foreign countries and not fully applicable to the Italian agri-food sector. The ILCIDAF project involved four scientific Research Units: Universities of Bari, Chieti-Pescara, Messina, and Reggio Calabria. Each unit developed a specific supply chain relevant to the Italian economic system: bread and pasta (Bari), wine (Chieti-Pescara), olive oil (Messina) and citrus fruits (Reggio Calabria).
